Not all kits are equally forgiving. The gentle ones are just powder, water and stirring - mess up the water and you simply try again. But some kits, like the hamburger shop, add a step that raises the difficulty sharply: the microwave.

The moment heat and timing enter the picture, you've got a second thing that can go wrong on top of the water. Microwaves vary enormously in power, and a few seconds too long can overcook or seize a mixture that would have been perfect.
